Around this time my family and I start to prepare for the lenten season, alot of folks celebrate this time. If you wondering what lent is it’s the forty days before Easter usually right after fat Tuesday. In earlier times, people used Lent as a time of fasting and repentance. Since they didn’t want to be tempted by sweets, meat and other distractions in the house, they cleaned out their cabinets. They used up all the sugar and yeast in sweet breads before the Lent season started, and fixed meals with all the meat available. It was a great feast! My Dominican Abuela kept this tradition, she has been doing this since she was a little girl so it was only natural that my family and I do it as well. I decided to give up soda, ay dios mio it’s going to be hard to give that up for 40 days.
I headed to my local La Michoacana Meat Market and found the items I needed to create my recipes. I looked up in my Abuela’s recipe book and found some super easy and delicious recipes to share with you guys. The two recipes I want ed to share is the Tex-Mex vegan chili and crusty chipotle toast. I was excited to incorporate La Morena chipotle and jalapeno to give my recipes a little kick.
Ingredients:
1 can of Red Kidney Beans
1 can of Chick peas
1 Can of black beans
2 Roma tomatoes cut into chunks
2 stalks of celery
Half a yellow onion
La Morena sliced Jalapenos pepper
Chicken broth or water
Shredded sharp cheddar
Chili Seasoning: I made my own, You will need 1 tablespoon of pepper, 1 1/2 tablespoon of cumin, 2 teaspoons of oregano, a few pinches of paprika. Mix well!
Start prepping the celery, cut them in small rounds; dice the onions, cut the tomatoes a bit chunky and slice up the jalapenos.
Get the canned beans and toss them all in a pan.
Make sure to add the tomatoes as well in the pot.
Add the seasoning mix you just made and mix all of it well.
In addition to chopping the Jalapenos, add a few more of the La Morena sliced jalapenos into the pot and mix. Add a bit of chicken broth or water until the liquid is above the beans.
Let the Chili cook for 30 minutes on medium heat until it is reduced to a thick consistency, once the chili is cool serve in the bowl and garnish with shredded cheese and a few jalapenos for extra heat.
Dice up the chipotle and spread generously across the loaf make sure it’s evenly coated.
