I wanted to share a Pumpkin cheesecake Recipe my mother shared with me and I cook it around this time of year. I noticed when it’s November or December I am on a baking streak, no one can stop me and i’m popping cookies,cakes and cheesecakes out the oven. One thing I hate that happens is everything ends up sticking to the pan and then instead of a nice slice of apple pie you get a big hot mess on a plate. So I make to to have a can of Pam around whenever I am in a sticky situations. It keep everything in place and makes it easy to slide off the pan plus it’s “99% Less Residue” which is amazing. Here is my step by step guide to making this amazing Cheesecake.
First I started with the crust which was so fun to make because I had my bff helping me in the kitchen. Having another person to help you in the kitchen is always a plus. We started out with 16 graham crackers and made sure to pop them in the blender and gave it a pulse.
Then we poured the crumbled graham crackers into a bowl, melted a stick of butter and mixed it in a bowl until it looked like below.
Make sure to mix it well then pour in your baking dish and start pressing away until it looks like its all flattened. Below is the full recipe which you can download and make for yourself!
- 1 3/4 cups graham cracker crumbs
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1 stick melted salted butter
- 3 (8-ounce) packages cream cheese, at room temperature
- 1 (15-ounce) can pureed pumpkin
- 3 eggs plus 1 egg yolk
- 1/4 cup sour cream
- 1 1/2 cups sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon fresh ground nutmeg
- 1/8 teaspoon ground cloves
- 2 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees F.
- In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch pan. Set aside for now.
- Beat cream cheese until smooth. Add pumpkin puree (I used a real pumpkin), eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
- Pour into crust. Spread out evenly and place in oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 3 hours or until cool and firm.
After you pout it into the dish ,put it in the oven and bake for a hour on 350 degrees. It should look like the photo below!
After it comes out the oven I suggest letting it sit for 15 mins before trying to put it in the freezer. Hot and cold does not mix well in the freezer and you will have a cracked baking dish. Make sure to chill in the freezer for 4 hours and enjoy your tasty treat!! Thank you to my bff Timothy for taking the pictures and helping me bake this tasty dish!
