I am starting two new sections on my blog for Food related blogs, a Foodie section which is for when I try new local cuisines And a Recipe section, I’m not sure if you knew but I loveeee to cook and i thought it would be great to show you some recipes that i know and some that I will remake! Which brings me to this amazing recipe that I want to share with you guys. Laura Vitale aka Laura in the Kitcken has an yummy recipe “Sauteed Chicken w/ Tomatoes & Goat Cheese. So i took a crack making it and it came out pretty good!
2 Garlic Cloves minced
2 Tablespoons of Olive oil
1 teaspoon of Salt & pepper ( i suggest you season the way you like it, I felt like i needed a bit more salt for the recipe but that’s just my palate)
3 to 4 dashes of Balsamic Vinger
12 Pitted Kalmata Olives Sliced in half)
12 Cherry Tomato’s (Sliced in Half)
Fresh basil
Goat cheese
Make sure to wash your chicken off before you start seasoning them so you can clean off any membrane that may be there. Trim off the leftover fat on the chicken, then lay your chicken breast on flat surface. Salt and Pepper to taste, then prepare frying pay with a tablespoon of Olive oil.
Pan fry the Chicken Breast for 5 mins each side till golden brown.
Plate the chicken and put on the side for later. Now start on the Kalmata and Cherry tomato mix. Get a bowl and Mix the Kalmata olives with the Cherry tomato’s with a little bit of salt and pepper.
Get the minced garlic and put it in the pan you had your chicken in. Fry up for a beat and toss in the Kalmata/Tomato mix cook for a few mins.
I wish you guys could have smelled how amazing this food smelled!
Add in the Pan the a few dashes of Balsamic Vinger and Basil let cook for a few more minutes. And Viola you are done!
Just pour the mix on the already plated chicken and you are done! Don’t forget to add the Goat cheese, just break apart the goat cheese over the dish.
I decided to make a Side salad for this dish. And my brother chimed up and said what about a Caesar salad. It’s very easy to make all you need is.
Angel’s Caesar Salad!
One head of Romaine Lettuce
2 Anchovies
1 Lemon
Olive Oil
3 cloves of garlic (Minced)
Croutons
Get a bowl, use the olive oil and grease the bowl. Then squeeze the whole lemon in the bowl and add the minced garlic,and anchovies and whisk.
Grab a head of romaine and chop up, toss the salad in the lemon mixture.
And serve on the side of any dish!
